impromptu stuffed mushrooms turned out a treat last night!
i was going to make breakfast for dinner, a repeat of the other day's breakfast but then realised i had the ingredients to make my stuffed mushrooms.
a few frantic moments searching for cous cous (and using every tiny leaf off my basil plant) aside, it went swimmingly.
i normally top with fresh parmean before baking but there will be no breaking of the vegan rules this month!
they still tasted like salty heaven anyway :)
i also took a picture this morning of my pillowcases as they are dreamy.
