chilli lime tofu.



I bought Vegan Yum Yum when I did the Vegan Easy Challenge in March.
Although I have stayed vegan since, I have only made one dish from the book!
So this week I am trying some newbies to add to my ever-expanding dinner favourites.
Last night I made chilli lime tofu with steamed Chinese broccoli and snow peas on quinoa.
It was, AMAZING.
The sauce was all chilli/lime/soy/garlicy perfection and super tasty.

it's over...



...and it ended with the best roast veggies and onion gravy i've ever made.
i just finished the thirty day vegan easy challenge.
i consumed/purchased no animal products (including products tested on animals) for a month and it was a sinch - hardly a challenge at all!
if you click the vegan easy catagory at the bottom of this post, you'll see a zillion delicious things that i cooked and ate over the month of march.
i didn't miss or crave meat or dairy once, i lost two kilos, my insides feel amazing and my heart is happy!

i blogged this month long challenge to give an inside scoop on veganism and try to shake the common myth of vegans eating rabbit food and living off salad and lentils.
i think i sucessfully proved that you can eat amazing (and junky) food without a single animal or their by-products being used or killed!
veganism - easier than you think, and the earth will love you for it :)

food guilts.




i ate a fair bit of take-away yesterday, tried to make myself feel less guilty by eating grapes...
i even brought leftovers for lunch and everything but the smell of indian, it was too much!
i had a chickpea and potato curry and some spicy eggplant and potato curry with a pakora.
post-pakora and thieving two pappadums from my friend's plate, i ate about three mouthfuls of curry... extra guilt.
dinner was thai sweet potato curry puffs, spring rolls, satay veggies and black bean tofu.

guilty, but satisfied!
p.s pictures are horrible but there was no time to focus, mouthwatering food was waiting.

tasty yesterday.




lunch - avocado and vegetable (lettuce, avo, carrot, cucumber, mushroom and tofu) sushi with chilli and lot's of soy sauce.
dinner - stirfry with onion, garlic, ginger, carrot, brocolli, pak choy, zuchinni, sugar snap peas, mushrooms, coriander, chilli and soba noodles.
i use a mix of rice wine vinegar, light soy sauce, sweet soy sauce, mirin and sesame oil for the sauce.

easy vegan weekend four.

 

 




argh!
28 days of vegandom already, only 3 days left!
that was very very quick.
anyway here's some food from my weekend, it was tasty and good.
  • felafel wrap on wholemeal lebanese bread with hommus, lettuce, avocado, felafel, snow pea sprouts (my fave!), tomato, spanish onion and sweet chilli sauce
  • lunch the next day, same thing minus the wrap
  • turkish toast with avo and shrooms
  • deep fried goodness and beer (it was the weekend after all!)
  • toast, grilled tomato, spinach, avo hash brown and basil garlic marinated shrooms

dumpling night take two.






second go at making dumplings last night and ooooooh my goodness they were fantastic.
tastiest little things in the world.
drowned them in chilli and soy and was in heaven.

also the tree outside my bedroom window is flowering, isn't it pretty.

rice paper rolls.





i love making/eating these but man they take a lot of preparation.
i pre-soak the vermicilli noodles and pre-fry the satay marinated tofu.
prepare and organise the fresh produce and begin the assembly line.
my recipe changes every time depending on what i feel like (or what i have in the house).
last night was lettuce, carrot, cucumber, tomato, shallots, fresh lime juice, fresh chilli, crushed peanuts and vermicilli noodles.
i usually include pickled ginger and coriander but totally forgot them last night, too many tasty things to remember!
i also make a dipping sauce with soy, rice wine vinegar, mirin and sesame oil.
it's delicious!
so yeah, how awesome are rice paper rolls, it's how i force myself to eat healthy.

loving hut, trip eighty seven.



i will never get over the
hut.
it's close, cheap, vegan, tasty, clean, friendly and perfect.
i managed to restrain myself from ordering a choc banana smoothie, instead giving in to the usual deep fried salt and pepper mushroom (not pictured as we ate it within 2.4 seconds).
chow mein + thai curry = dinner.
p.s also will never get over the beefiness of the "beef".

easy vegan weekend three.







 



tasty weekend treats;
  • delicious udon noodle teppanyaki from my new fave - sushi kotobuki
  • accompanied by edamame, spring rolls, avocado sushi and veggie tofu sushi
  • sizzler salad bar, just manageable
  • iga home brand swiss dark chocolate, so so good
  • brown rice avocado sushi and miso from sushi sushi
  • toasted sourdough with fresh guacamole and roasted tomatoes from my new local in stones corner - lady marmalade. hard to get a seat but if you do, you are greatly rewarded. it's amazing.
  • table number for lady marmalade - creepy one legged corn. i like it.
  • an all-too-regular dose of nandos peri peri chips
so lot's of takeaway but still, another kilo lost!
veganism is working wonders :)



also, that chocolate came to the movies with us.
saw griff the invisible and loved it!
i adore aussie films.

food lately.






another few days of horrible vegan rabbit food :)
  • tacos with lettuce, bean mix (inc. corn and onion), tomato, avo and sweet chilli
  • massaman curry with potato, carrot, onion, chickpeas and pumpkin
  • delicious icy mango frappe
  • spicey tom yum soup with rice noodles
  • my favorite breakfast - sauteed onions, mushrooms, tomatoes with mixed herbs and a heaps of cracked pepper

still loving loving hut.


loving hut
for dinner = too, too delicious.
it may not have been healthy but oh my god it was good.
"chicken" nuggets and sauce, samosas with sweet chilli, salt and pepper mushroom, cutlet platter with chips and salad and my new addiction, a choc banana smoothie.
please note the extreme creepiness the the "meat" and how "meaty" it is.

p.s i've lost a kilo!
i get to eat like this and still lose weight!
dear animal products, we've had good times together but i'm leaving, please stay out of my life and off my waist :)

easy vegan weekend two.

  • apple and cinnamon pancakes with maple syrup
  • miso soup with rice noodles, pak choy, tofu and corriander
  • pizza on a wholemeal lebanese wrap with tomato paste, fresh garlic, mixed herbs, mushrooms, tomato, shallots, stuffed olives, kalamata olives, spanish onion, baby spinach leaves, fresh parsley and fresh basil
needless to say, i am enjoying the vegan easy challenge!
